Rice

We use 100% Koshitanrei rice, a premium sake brewing rice only available in Niigata Prefecture, which is grown under contract in the nature-rich Ojiya, Uonuma.

We use 100% soft water from Ojiya City, derived from snowmelt.

Sake Quality

A Special Designation Sake with a rice polishing ratio of 60% or less.
We seal the freshly brewed aromas through the binkan hiire process.

Storage

After bottling, we store the sake in a cool, dark storage facility to preserve the flavors.
